Recipe red cabbage slaw
Adapted from Gordon Ramsay's Sunday lunch
Eat the rainbow in a simple, delicious salad. Great for lunch or as a side dish.
Walnuts, cranberries, and flaxseed make this recipe great for menopause. The ingredients boost omega 3 and support urinary health. Citrus fruits also give a Vitamin C boost.
Serves 6
No cooking, easy prep
Ingredients - Slaw
Red cabbage
2 large carrots
2 Granny Smith apples
Lemon, squeezed
Walnuts, 1 handful
Cranberries, 1 handful,
1 Tablespoon Flax seeds
Ingredients -Dressing
120ml mayonnaise
4 tablespoons Greek yoghurt
1 tablespoon orange juice- squeeze a whole orange, drink the left overs!
Salt and pepper to season
To make the slaw
Quarter and core the red cabbage
Shred the red cabbage by slicing very finely.
Grate the carrots
Grate the apples
Mix together the red cabbage, carrots and apples
Toss in the lemon juice
Add the walnuts and cranberries
To make the dressing
Mix all the ingredients together
Toss the dressing through the salad.
