Recipe Cranberry & Camembert Edible Wreath
Ingredients
1 jar cranberry sauce
1 camembert
Handful of basil leaves
Filo pastry/puff pastry (all butter preferably)
Handful of mixed chopped nuts
A little melted butter to brush onto the filo pastry
This is a great menopause-supporting statement recipe! Stick to all-butter puff pastry or filo with brushed melted butter to help our ratio of omega 3 to 6. The regular puff is often made with sunflower oil and palm oil, which throws out the balance between omega 3 and 6.
Cheese supports our bones and teeth. You can switch this recipe to any similar soft cheese with a rind. Try Brie as a tasty alternative.
Basil adds micronutrients along with the nuts, you could even sprinkle a few linseeds on top of the pastry for added omega 3.
Cranberries are great for urinary health. You can use a jar for this recipe, but if you have time try making your own cranberry sauce.
Onto a baking tray lined with grease-proof paper.
Unroll the puff pastry sheet.
If using filo, roll out two sheets stacked on top of each other. Brush with melted butter, add a third sheet to the stack, brush with butter, add a fourth sheet, brush with butter, add a fifth sheet, brush with butter, and add a final sixth sheet.
In the centre of your pastry sheet place a side dish. Leave it on the pastry.
Around the small dish, on the pastry spread the cranberry sauce in a ring that reaches to just before the flat edge of the pastry sheet (about 5 cm).
Now cut the camembert into 3mm slices and place neatly on the ring of cranberry sauce.
Sprinkle the chopped nuts over the camembert.
Place leaves of basil on top of the nuts.
Lift off the side dish.
Now cut the centre circle of pastry into 8 just like a pizza.
Lift one “pizza” section over the ring of ingredients and pull up the outer pastry edge so that the two meet at the pointy triangle of the “pizza” slice.
Repeat as you go around the ingredient ring, it will leave a space that shows the ingredients as you go around.
Pop in the oven at 180C (or according to the instructions on your pastry) until the pastry is golden and the ingredients have melted into the cheese. Approx. 20 min.
